Vegan Gyros

I didn’t get into gyros until recently and I have to say that I have been missing out for a very long time. Gyros are a greek dish that contains pita bread with meat, lettuce, onions, tomatoes, and tzatziki sauce. What I love most about gyros is how easy this recipe is. For our vegan gyros, we will be using oyster mushrooms as our meat replacement. For this recipe, we will not be frying our mushrooms but will be placing them in the oven and letting those bad boys roast for a little until they get a good crisp to them.

Where can I buy oyster mushrooms from?

You can find oyster mushrooms at your local international market, however, I have seen some major grocery stores carry them as well.

Key ingredients

Oyster mushrooms~mushrooms will be the star of the show for this dish. We are really going to be making sure that they have a lot of flavor.

Non-dairy yogurt~ yogurt will be the base for our tzatziki sauce

Cucumbers~ what’s tzatziki sauce without cucumbers? I typically don’t like cucumbers but it is needed for this dish lol.

Ingredients
  

For the Tzatziki Sauce:

  • 1 cup non- dairy plain yogurt
  • ½ tbsp dried dill (You can also use fresh dill)
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • ½ finely chopper large cucumber

For the gyros:

  • 1 ½ pound oyster mushrooms
  • ¼ cup grape seed oil
  • ¼ tsp Himalayan pink salt
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 package pita bread
  • ½ cup chopped green lettuce
  • ¼ cup sliced tomatoes
  • 1 small sliced red onions

Instructions
 

For the mushrooms:

  • Preheat the oven to 450°°F.
  • In a large bowl, pull apart the oyster mushrooms about ½ inch wide
  • In a small bowl, stir the grape seed oil, salt, garlic powder, and onion powder. Then, stir in the mixture over the mushrooms ensuring that all of the mushrooms are coated.
  • Place the mushrooms on the cookie sheet and place them in the oven for 35-40 minutes or until the mushrooms turn brown.

For the tzatziki sauce:

  • Meanwhile, place the cheese cloth over a small bowl and place the cucumbers in the cheesecloth. Squeeze the cheesecloth to release the cucumber juice.
  • In a small bowl, stir in the cucumber juice, the chopped cucumbers, dill, yogurt, garlic powder, and onion powder to make the tzatziki sauce.

To assemble the gyros:

  • Take one slice of pita bread and spread the tzatziki sauce on it. Assemble the gyros by adding the lettuce, tomatoes, onions, and cooked mushrooms.
  • Repeat this process until all of the gyros of assembled.
  • Serve and enjoy.
